This coffee comes from San Juan in the Intibuca region. The farm La Cascada is located in the western highlands of Honduras. After large losses caused by coffee rust, the plantation owner Wilmer Maldonado decided to renew his plantation with more resistant varieties, including yellow and red Catuai. Wilmer is an enviornmentally conscious grower who takes care of his water resources and uses sustainable practices, such as shade management of the coffee plants and organic farming, on his farm. When harvesting and preparing the coffees, attention is paid to the exact ripening point of the cherries and an optimal fermentation process.
