EL MIRADOR | NATURAL HYDRO HONEY

This coffee comes from El Mirador which has been family owned for 3 generation and is managed by Elkin Guzman for 16 years now. The farm, which is located within the Huila region near the township El Rosal comprises an area of 32ha of which 30ha are planted in coffee. The coffees grown at an altitude between 1550-1680 masl. During the Natural Hydro Honey process cherries are dried and fermented whole for 8 days, similar to Natural processing. The dried cherries are then placed in water tanks for 36 hours. During this time the cherries are rehydrated, and sugars are broken down by the water. The coffee is then pulped and moved to raised beds. Here, the coffee will dry 20–25 days as Honey process coffee.
