LAKE TAWAR | SUMATRA GRADE 1 | FTO

This organic and fairtrade certified Sumatra Mandhelling Grade 1 comes from the Pegasing region near the city Takengon in the north of Sumatra in Indonesia, close to Lake Tawar and the Bukit Barisan mountains. Sumatran coffees, as is this one, are mainly produced by a unique semi-washed and wet-hulled process. In this process, the coffee is picked, machine pulped then partly sun dried. The parchment is then removed revealing a whitish coloured, swollen green bean when the moisture content is around 35%. The drying is then completed where the seed quickly turns to a dark green colour, unique to this part of the world.
